This is an easy meal for 1 serving. I prefer to use salt and pepper for seasoning but this is optional.
Ingredients
- 2 eggs
- 2 table spoons of water
- 1/3 cup of cooked broccoli florets
- 2 tables spoons of finely shredded cheddar cheese
- Salt and pepper
Method
- Beat eggs and water together in a small bowl
- With a cooking spray, coat the pan, about 6-8 inches thick
- Heat over medium-high heat until hot
- Pour in the egg mixture ensuring that it reached the edges
- Softly push the cooked edges to the center so that the uncooked portions can reach the surface of the hot pan
- When you see the upper surface thickening then it’s time to add a layer of broccoli and cheese.
- From one edge of the omelet, fold it in half with a turner
- Transfer the omelet to a large plate the season with salt and pepper.
